Improvising

I'm pretty good at planning our dinner menu. The thing for me is planning lunch and healthy snacks. Sometimes I find myself improvising. Usually this results in quesadillas, PB&J, or grilled cheese. Sometimes they get a little more creative. Today I made a homemade tomato soup. Simply said, I had a bit of crushed tomatoes left over from another dinner and I didn't know how to use it. In thinking about lunch I thought... grilled cheese... AND tomato soup.

So, since I didn't have half the ingredients called for on my go to recipe sites, I made my own.
Crushed tomatoes
water
milk
spoon full of margarine
palm full of basil
half a cube of chicken bouillon

5 minutes later a, NOT gourmet, but better than expected tomato basil soup.

I wonder what other concoctions I can make from left overs. Yesterday I made apple syrup (more like apple butter since I used apple sauce instead of juice) for our dinner waffles. It turned out yummy.

What are your creative ways of using up left overs?
