
I don't know whether I should post this as a main dish or a side. I use it as a whole meal mostly because we love it so much that we eat enough at once for it to be a main dish. It's got protein, and LOTS of veggies. OH so good and NO baking! We eat ours with tortilla chips so it's like a salsa. Anyway, just as a side note, I don't put in the oil it calls for. I don't like the coating it gives and I find it much more refreshing with just the lime/lemon juice. It's still good with the oil. I just prefer it without.
I made it for dinner yesterday because it's sweltering here and the thought of turning on the oven was depressing. Try it, I KNOW you'll love it!
On another note, Eli got a new book last week. "The Three Billy Goats Gruff." He absolutely LOVES it! Just today, I overheard him reading it to himself doing ALL of the voice inflections I do when I read it to him (i.e. the gravelly troll's voice, the three different voices for each sized billy goat etc.) So cute. I need to charge up the video camera so I can catch these on film sometime.

Aww that is so cute! Maybe he is going to start reading as much as Aaron and Andrew. Oh and that salad looks awesome. I defiantly need to make it. I just love fresh tasting foods.

Haylee is funny that way too, talking with deep voices for certain characters. We are SO excited to see you an Eli if you decide to come up to the cabin.

Funny, Jed will NOT let me read the 3 Billy Goats Gruff, it completely freaks him out. He's a little soft, I'm sure Eli could beat him up, oh well. Aren't little boys fun? Love em!
